Coffee Storage:

Green Beans

Green beans can be stored for about one to two years before loss of flavour is detectable. We don’t think that you will have any reason to keep our beans sitting around that long! If you plan to roast the beans within a few months of purchase, they should store fine in the provided sealed plastic bag. If green beans are to be stores for longer periods of time, they should be stored in containers that are breathable and impart no other flavours to the beans: burlap or paper bags work well. Store them at room temperature out of direct light. Ideally the storage environment should be approximately 70 degrees F. with around 50% relative humidity.

Roasted Coffee

Roasted coffee is a highly perishable product. Ground coffee is particularly susceptible to staling due to the increased surface area that is exposed to air. Therefore, always store your roasted coffee as whole beans in an airtight, moisture-proof container. We use canning jars as a cheep and effective way to store roasted coffees. Most roasted coffee will only keep fresh for about 5-6 days. This deterioration of flavour is an unavoidable process as the coffee interacts chemically with oxygen in the air. Roast only enough coffee to meet your needs for 5-6 days. Since you will be using the coffee quickly, there is no need to store the coffee in the refrigerator. Just store the coffee in a sealed container in a dark place at room temperature – the cupboard works fine. And remember that coffee needs time to “rest” after roasting (4-24 hours), to allow the coffee to de-gas (CO2) and the flavour to really develop.
